    Prepare the Ingredients

    Gather all the ingredients, clean the shellfish, and chop the vegetables.

    Marinate Chicken

    Cut the chicken thighs into bite-sized pieces, season with salt and pepper, and set aside.

Cooking

    Sauté the Aromatics

    In a large paella pan or skillet, heat olive oil over medium heat. Add chopped onion, garlic, and bell peppers. Sauté until the onion is translucent.

    Brown the Meats

    Add the chorizo and chicken to the pan. Sauté until the chicken is browned on all sides.

    Add Tomatoes and Spices

    Stir in the diced tomatoes, smoked paprika, and saffron threads. Cook for 2-3 minutes to let the flavors combine.

    Add Rice and Broth

    Add the Bomba rice to the mixture, stirring well to coat. Pour in the chicken broth, and bring to a boil.

    Simmer the Paella

    Reduce the heat to low and let the paella simmer for about 15 minutes without stirring. This allows a crust to form on the bottom.

    Add Shellfish and Peas

    Arrange the shrimp, mussels, and clams on top of the rice. Sprinkle the peas over the dish. Cover and cook for an additional 10-12 minutes, or until the shellfish open and the rice is cooked.

    Remove the pan from heat and let it rest for 5 minutes. Serve warm with lemon wedges on the side.
