Method

Preparation

  1. 1

    Sautéing the Base

In a large paella pan or skillet, heat the olive oil over medium heat. Add the chopped onion and red bell pepper and sauté until they are soft, about 5 minutes.

  2. 2

    Adding Aromatics

Stir in the minced garlic and sauté for an additional minute until fragrant.

  3. 3

    Incorporating Rice and Spices

Add the Bomba rice, paprika, and saffron. Stir well to coat the rice with the oil and spices, cooking for 2 minutes.

  4. 4

    Adding Stock

Pour in the fish stock and bring to a boil. Season with salt to taste. Reduce heat to medium-low and let it simmer for 10 minutes.

Cooking the Seafood

  1. 5

    Adding Shellfish

Carefully add the shrimp, mussels, clams, and squid to the rice mixture, stirring gently to distribute evenly.

  2. 6

    Simmering

Cover the pan with a lid or aluminum foil and let it simmer for another 10-15 minutes, or until the seafood is cooked through and the rice has absorbed most of the liquid.

Finishing Touches

  1. 7

    Resting

Remove the pan from heat and let it rest for 5 minutes, covered, to allow the flavors to meld.

  2. 8

    Garnishing

Sprinkle the chopped parsley on top and serve with lemon wedges on the side.
