Preparation of Seafood

    Prepare the Whiting

    Rinse the whiting fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

    Prepare the Shrimp

    If using raw shrimp, peel and devein them. Rinse under cold water and set aside.

Cooking the Sauce

    Sauté the Aromatics

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion. Sauté for about 3-4 minutes until the onion is translucent and the garlic is fragrant.

    Add Sherry and Stock

    Pour in the sherry wine and fish stock. Stir to combine, then bring the mixture to a gentle simmer.

    Season the Sauce

    Add paprika, salt, and black pepper to the sauce. Adjust seasoning to taste.

Cooking the Seafood

    Cook the Whiting

    Carefully place the seasoned whiting fillets into the simmering sauce. Cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

    Add the Shrimp

    Once the whiting is nearly cooked, add the shrimp to the skillet. Cook for an additional 3-4 minutes, or until the shrimp turn pink and are cooked through.

Serving

    Once cooked, remove the skillet from heat. Sprinkle chopped parsley over the seafood for garnish and serve the dish warm, accompanied by crusty bread or rice.
