Clean the Mussels
Rinse the fresh mussels under cold running water to remove any sand or debris. Discard any mussels that are open and do not close when tapped.

Sauté Vegetables
In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook for about 3-4 minutes until translucent. Stir in the minced garlic and diced red bell pepper, and cook for an additional 2-3 minutes.

Add Tomatoes and Spices
Add the diced tomatoes, paprika, cayenne pepper, salt, and black pepper to the pot. Stir well to combine and let it simmer for about 5 minutes, allowing the flavors to meld.

Deglaze with Wine
Pour in the white wine and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for another 5 minutes.

Cook Mussels
Add the cleaned mussels to the pot, cover it with a lid, and cook for about 5-7 minutes, or until the mussels have opened. Discard any mussels that do not open.

Garnish and Serve
Stir in the chopped parsley for freshness. Serve the mussels in bowls with the spicy tomato sauce, accompanied by crusty bread to soak up the sauce.
