Preparation of the Fish

    Season the Sole

    In a bowl, season the sole fillets with salt and black pepper on both sides. Let them sit for about 10 minutes to absorb the seasoning.

    Heat the Pan

    In a large skillet, heat 2 tablespoons of olive oil over medium heat until hot.

    Cook the Sole

    Carefully place the seasoned sole fillets in the skillet. Cook for about 3-4 minutes on each side until they are golden brown and cooked through. Remove the fish from the skillet and set aside on a plate.

Preparation of the Sauce

    Make the Garlic and Lemon Sauce

    In the same skillet, add the remaining 2 tablespoons of olive oil and 2 tablespoons of butter. Once the butter has melted, add the minced garlic and sauté for about 1 minute until fragrant, but not browned.

    Add Lemon

    Stir in the lemon juice and lemon zest. Cook for another 1-2 minutes to allow the flavors to meld together.

    Finish the Sauce

    Remove the skillet from heat and stir in the chopped parsley. Taste and adjust seasoning with salt and pepper if necessary.

Serving

    Serve the Dish

    Return the cooked sole fillets to the skillet to warm through for about 1 minute in the sauce. Then, transfer the sole fillets to serving plates and drizzle the garlic lemon sauce over the top. Garnish with additional parsley if desired.
