    Prep the Lobster

    Preheat the oven to 375°F (190°C). Carefully split the lobster tails in half lengthwise. Remove the meat from the shells and chop it into small pieces, keeping the shells intact for later use.

    Season the Lobster

    Sprinkle the lobster meat with salt and black pepper to season. Set aside.

Making the Stuffing

    Sautéing the Vegetables

    In a skillet, heat olive oil over medium heat. Add shallots and garlic, and sauté until translucent, about 2-3 minutes. Add the diced red bell pepper and continue cooking for another 2-3 minutes.

    Combining Ingredients

    In a large bowl, combine the sautéed vegetables with the chopped lobster meat, breadcrumbs, chopped parsley, paprika, lemon juice, and grated Parmesan cheese. Mix well until all ingredients are evenly incorporated.

Stuffing and Baking

    Stuff the Lobster

    Spoon the stuffing mixture back into the lobster shells, packing it down gently.

    Bake the Lobster

    Place the stuffed lobster tails on a baking sheet. Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and the lobster meat is cooked through.

Serving

    Garnish and Serve

    Remove the stuffed lobsters from the oven and let them cool for a few minutes. Garnish with lemon wedges and chopped fresh parsley before serving.
