Prepare the Ingredients
Start by slicing the chicken breasts into fillets if they are thick. Dice the red and green bell peppers, chop the mushrooms, and finely chop the onion and garlic. Cut the Spanish chorizo or ham into small cubes.

Cook the Chicken
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken fillets with salt and black pepper. Add the chicken to the skillet and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Add Ham and Brandy
Stir in the diced Spanish chorizo or ham and cook for 2 minutes. Carefully add the brandy to the skillet, allowing it to simmer and reduce slightly, about 2-3 minutes.

Combine Chicken and Sauce
Return the cooked chicken to the skillet, coating it with the vegetable and brandy sauce. Let it cook together for an additional 2 minutes to meld the flavors.
