    Season the Pork Chops

    Pat the pork chops dry with paper towels. Season both sides with salt and black pepper.

    Sear the Pork Chops

    In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side, until they are browned. Remove from the skillet and set aside.

Making the Sauce

    Sauté Onions and Garlic

    In the same skillet, add chopped onion and sauté for about 3-4 minutes until translucent. Add minced garlic and cook for an additional minute until fragrant.

    Deglaze the Pan

    Pour in the red wine, scraping the bottom of the skillet to release any browned bits. Bring to a simmer and let it cook for about 5-7 minutes, allowing the wine to reduce slightly.

    Add Broth and Thyme

    Stir in the chicken broth and fresh thyme. Bring the mixture back to a simmer.

    Return Pork Chops to Skillet

    Return the seared pork chops to the skillet, spooning some sauce over the top. Cover the skillet and let it simmer for about 15-20 minutes, or until the pork is cooked through and tender.

    Finish with Butter

    Once the pork chops are done, remove them from the skillet. Whisk in the butter into the sauce until melted and well combined. Adjust seasoning if necessary.

    Plate the pork chops and pour the wine sauce over the top. Serve hot with your choice of sides.
