Method

Preparation of Cod

    Soak the Cod

    Rinse the dried salt cod under cold running water to remove excess salt. Place it in a large bowl and cover it with cold water. Let it soak for 24 to 48 hours in the refrigerator, changing the water several times.

    Drain and Pat Dry

    After soaking, drain the cod, and gently pat it dry with a clean towel. Cut it into large chunks.

Cooking the Bacalao al Pil-Pil

    Prepare the Garlic

    Peel the garlic cloves and slice them thinly.

    Heat Olive Oil

    In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until golden and fragrant, about 2-3 minutes, being careful not to burn it.

    Add the Cod

    Gently place the cod chunks into the skillet and allow them to cook in the olive oil for about 5-7 minutes, turning occasionally.

    Create the Sauce

    Reduce the heat to low and continue to cook for another 10-15 minutes, stirring occasionally. The cod will begin to break down and emulsify with the oil, creating a rich sauce.

    Add Seasoning

    Sprinkle the red pepper flakes into the skillet, and stir in the chopped fresh parsley. Adjust seasoning if necessary.

Serving

    Plate the Dish

    Transfer the bacalao al pil-pil to a serving dish, ensuring to drizzle the sauce over the fish. Serve with lemon wedges and crusty bread on the side.
