Ravioli

Method

Preparation

  1. 1

    Make the Ravioli Dough

In a large bowl, mix the flour and salt. Create a well in the center, add eggs, and mix until a dough forms. Knead on a floured surface until smooth. Wrap in plastic and let rest for 30 minutes.

  2. 2

    Prepare the Filling

In a bowl, combine ricotta cheese, grated Parmesan, chopped basil, nutmeg, and salt. Mix until smooth.

  3. 3

    Roll Out the Dough

Divide the dough into four pieces. Roll each piece thinly with a pasta machine or rolling pin on a floured surface.

  4. 4

    Form the Ravioli

Place teaspoons of the filling on one sheet of dough, spacing them about 2 inches apart. Moisten the edges with water, then cover with another sheet of dough. Press down to seal and cut into squares.

  5. 5

    Prepare the Marinara Sauce

In a saucepan, heat olive oil over medium heat. Add chopped onion and bell pepper; sauté until soft. Add minced garlic and cook for 1 minute. Stir in crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 20 minutes.

  6. 6

    Cook the Ravioli

Bring a large pot of salted water to a boil. Cook the ravioli in batches for 3-4 minutes until they float. Remove with a slotted spoon and drain.

  7. 7

    Serve

Plate the ravioli and top with marinara sauce. Garnish with additional Parmesan and basil if desired.
