Dough Preparation

Make the Dough

In a large bowl, mix the flour and salt. Make a well in the center and add the eggs and olive oil. Gradually combine the flour into the eggs until a dough forms. Knead for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Filling Preparation

Prepare Beef Filling

In a skillet, sauté the onion and garlic in olive oil until soft. Add the ground beef and cook until browned. Remove from heat and let cool. Mix in Parmesan cheese, beaten egg, salt, pepper, and parsley.

Prepare Ricotta Filling

In a bowl, combine ricotta cheese, Parmesan cheese, beaten egg, salt, pepper, and basil. Mix well until smooth.

Ravioli Assembly

Shape the Ravioli

Roll out the dough on a floured surface until thin. Cut into squares (about 3 inches). Place a tablespoon of filling in the center of half of the squares. Moisten the edges with water, top with remaining squares, and press to seal. Ensure there are no air pockets.

Cooking

Cook the Ravioli

In a large pot of salted boiling water, cook the ravioli for 3-5 minutes until they float to the surface. Remove with a slotted spoon.

Serve the ravioli with marinara sauce, garnished with fresh basil if desired.
