Making Ravioli

Prepare the Dough
In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into the well. Gradually incorporate the flour into the eggs using a fork until the mixture comes together. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat, then add minced garlic and cook for an additional minute. Remove from heat and let cool. In a bowl, combine cooked beef (or ricotta), Parmesan cheese, salt, pepper, and herbs. Mix well.

Roll Out the Dough
After resting, divide the dough into four pieces. Roll out each piece into thin sheets (about 1/16 inch thick) using a pasta machine or a rolling pin.

Assemble the Ravioli
On one sheet of dough, place small mounds (about 1 tsp) of filling, leaving enough space between each mound. Moisten the dough around the filling with water. Place another sheet of dough over the top, pressing down around the filling to seal. Cut out individual ravioli using a knife or pasta cutter.

Cook the Ravioli
Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon and serve with your favorite sauce.
