Prepare the Home Fries
Peel and dice the potatoes into small cubes. In a skillet, melt 1 tablespoon of butter over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden brown and crispy, about 15-20 minutes. Stir occasionally.

Cook the Country Ham
In another skillet, add the country ham and cook over medium heat until heated through and slightly crispy, about 5-7 minutes. Remove from heat and set aside.

Make the Buttermilk Biscuits
Preheat the oven to 450°F (230°C). In a large bowl, mix flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined. Turn the dough onto a floured surface, knead gently, and roll out to about 1-inch thickness. Cut out biscuits using a biscuit cutter or glass. Place on a baking sheet and brush the tops with milk. Bake for 10-12 minutes until golden.
