    Peel and dice the potatoes into small cubes. In a skillet, melt 1 tablespoon of butter over medium heat. Add the diced potatoes, season with salt and pepper, and cook until golden brown and crispy, about 15-20 minutes. Stir occasionally.

    In another skillet, add the country ham and cook over medium heat until heated through and slightly crispy, about 5-7 minutes. Remove from heat and set aside.

    Scramble the Eggs

    In a bowl, beat the eggs until well mixed. In a skillet, melt 1 tablespoon of butter over medium-low heat. Pour in the beaten eggs and gently stir with a spatula until soft curds form and the eggs are cooked to your liking. Remove from heat.

    Make the Buttermilk Biscuits

    Preheat the oven to 450°F (230°C). In a large bowl, mix flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined. Bake for 10-12 minutes until golden.
