Prepare the Roast
Season the beef chuck roast with salt and black pepper on all sides.

Add Liquid and Herbs
Return the beef roast to the pot. Add the beef broth, thyme, and bay leaves. Bring to a simmer.

Braise the Roast
Cover the pot and reduce the heat to low. Let it braise for about 3 hours, or until the beef is tender and easily shredded.

Make the Gravy
Remove the beef from the pot and set aside. Strain the liquid and return it to the pot. In a small bowl, mix cornstarch with water to create a slurry. Bring the liquid to a simmer and whisk in the cornstarch slurry until thickened.
