Method
Prepare Pork Tenderloin
Marinate the Pork
In a small bowl, mix the soy sauce, garlic powder, and black pepper. Rub the mixture over the pork tenderloin and let marinate for at least 30 minutes.
Sear the Pork
Heat olive oil in a large skillet over medium-high heat. Sear the marinated pork tenderloin on all sides until browned, about 8-10 minutes. Remove from skillet and set aside.
Cook Vegetables
Finish the Dish
Combine and Simmer
Return the seared pork tenderloin to the skillet, cover, and simmer on low heat for 20 minutes until fully cooked.
Prepare Cornbread
Mix Dry Ingredients
In a bowl, mix cornmeal, flour, baking powder, sugar, and salt.
Bake Cornbread
Pour wet ingredients into dry ingredients, mix until just combined, then pour into a greased baking dish. Bake at 400°F (200°C) for 20-25 minutes.
