    Prepare the Ingredients

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, bell pepper, and celery. Sauté for about 5 minutes until they begin to soften.

    Add Sausage and Garlic

    Slice the andouille sausage and add it to the pot. Stir in the minced garlic and cook for an additional 2-3 minutes until fragrant.

    Combine Rice and Beans

    Add the rice, South Carolina beans, diced tomato, Cajun seasoning, salt, black pepper, and bay leaves. Stir to combine all ingredients.

    Add Broth

    Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low, cover the pot, and let it simmer for about 20 minutes.

    Add Shrimp

    After 20 minutes, add the wild Gulf shrimp to the pot, stir gently, and cook for an additional 5 minutes or until the shrimp are pink and cooked through.

    Remove the bay leaves, garnish with sliced green onions, and serve hot.
