Preparation Steps

  1. 1

    Prepare the Chicken

In a large pot, place the whole free range chicken and cover with water. Bring to a boil and then reduce heat to simmer. Cook for about 1 hour, or until the chicken is fully cooked and tender. Remove the chicken from the pot and let it cool. Reserve the broth.

  2. 2

    Prepare the Vegetables

While the chicken is cooling, chop the celery, carrots, and onion. Once the chicken is cool enough to handle, shred the meat into bite-sized pieces, discarding the skin and bones.

  3. 3

    Make the Gravy

In the same pot with the reserved broth, add the chopped vegetables and bring to a boil. Cook until the vegetables are tender, about 10 minutes. Stir in the chicken gravy and the shredded chicken. Add sweet peas and simmer for another 5 minutes.

  4. 4

    Prepare the Dumplings

In a bowl, mix together 2 cups of all-purpose flour, 1 tablespoon of baking powder, and a pinch of salt. Add 1 cup of milk and 4 tablespoons of melted butter, stirring until just combined. Drop spoonfuls of the batter into the simmering chicken mixture.

  5. 5

    Cook the Dumplings

Cover the pot and let the dumplings cook for about 15 minutes, or until they are fluffy and cooked through. Do not lift the lid during this time.

  6. 6

    Serve

Once the dumplings are cooked, gently stir the mixture and serve hot. Enjoy your delicious Mitten Chicken & Dumplings!
