    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden. Gradually whisk in the milk, stirring constantly until the mixture thickens.

    Add Cheeses

    Remove the pot from heat and stir in the smoked gouda and cheddar cheese until completely melted and smooth. Season with salt, pepper, and paprika.

    Combine Pasta and Sauce

    Add the cooked macaroni to the cheese sauce and stir until well combined. If desired, fold in breadcrumbs for a crunchy topping.

    Bake (optional)

    For a baked version, preheat the oven to 350°F (175°C). Transfer the mac and cheese to a baking dish, sprinkle additional cheese and breadcrumbs on top, and bake for 20-25 minutes until golden and bubbly.
