Prepare the Shrimp
Peel and devein the shrimp, leaving the tails on if desired. Pat dry with paper towels.

Make the Batter
In a large bowl, whisk together the flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper. In another bowl, whisk together the eggs and milk.

Batter the Shrimp
Dip each shrimp into the egg mixture, allowing the excess to drip off, then into the flour mixture to coat evenly. Place the battered shrimp on a plate.

Heat the Oil
In a large pot or deep fryer, heat the cooking oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Carefully add the battered shrimp to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 2-3 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

Serve
Serve the fried shrimp hot with your choice of dipping sauce.
