    Prepare the Slaw

    In a large bowl, combine shredded cabbage, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix well and set aside in the refrigerator to chill.

    Make the Succotash

    In a skillet over medium heat, add a tablespoon of oil. Add corn, bell pepper, and tomatoes. Cook for about 5-7 minutes until vegetables are tender. Stir in chopped green onions and season with salt and pepper to taste. Keep warm.

    Soak the Catfish

    Place catfish fillets in a shallow dish and cover them with buttermilk. Let them soak for at least 30 minutes.

    Prepare the Coating

    In a shallow dish, mix cornmeal, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper.

    Fry the Catfish

    Heat the vegetable oil in a large skillet over medium-high heat. Remove catfish from buttermilk, letting excess drip off. Dredge each fillet in the cornmeal mixture and fry for about 4-5 minutes per side, or until golden brown and cooked through.
