Prepare the Catfish
Cut the catfish fillets into strips about 1 inch wide and 4 inches long.

Marinate
Soak the catfish strips in buttermilk for at least 30 minutes to enhance flavor and tenderness.

Make the Coating
In a shallow dish, mix together the flour, cornmeal, cayenne pepper, paprika, garlic powder, onion powder, black pepper, and salt.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

Coat the Catfish
Remove the catfish from the buttermilk, letting the excess drip off, then dredge each strip in the flour mixture until well coated.

Fry the Catfish
Carefully place the coated catfish strips in the hot oil, frying in batches to avoid overcrowding. Cook for about 3-4 minutes per side, or until golden brown and cooked through.

Drain and Serve
Remove the fried catfish from the skillet and drain on paper towels. Serve hot with remoulade sauce.
