    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, celery, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.

    Cook the Meats

    Add the diced chicken and sliced Andouille sausage to the pot. Cook until the chicken is browned and cooked through, about 8-10 minutes.

    Add the Okra and Seasonings

    Stir in the sliced okra, diced tomatoes (with their juice), Cajun seasoning, bay leaves, salt, and black pepper. Mix well to combine.

    Add Broth and Simmer

    Pour in the chicken broth and bring the mixture to a boil. Reduce heat to low and let it simmer for about 30 minutes, stirring occasionally.

    Stir in Hoppin' John

    After 30 minutes, add the Hoppin' John to the pot and stir well. Continue to simmer for an additional 10 minutes.

    Serve

    Remove bay leaves before serving. Ladle the gumbo into bowls and garnish with chopped green onions. Enjoy your Carolina Gumbo!
