    In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the rendered fat in the pot.

    Sauté the Vegetables

    Add butter to the pot with the bacon fat. Add the diced onion, celery, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.

    Add Sausage

    Stir in the sliced andouille sausage and cook for another 5 minutes until browned.

    Combine Clams and Seasoning

    Add the diced clams, thyme, cayenne pepper, black pepper, and salt to the pot. Stir to combine.

    Pour in the heavy cream and bring the mixture to a gentle simmer. Allow it to cook for 10-15 minutes, stirring occasionally.

    Finish with Hot Sauce

    Stir in the Crystal hot sauce, adjusting to taste. Return the cooked bacon to the chowder.
