Method

Preparation Directions

  1. 1

    Marinate Chicken

In a bowl, combine buttermilk, salt, black pepper, garlic powder, and paprika. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight.

  2. 2

    Prepare Honey Jalapeno Dressing

In a small bowl, whisk together honey, minced jalapeno, olive oil, lime juice, and salt until well combined. Set aside.

  3. 3

    Fry Chicken

Heat the olive oil in a deep skillet over medium-high heat. Remove chicken from marinade and dredge in a mixture of flour and cornstarch. Fry the chicken for about 6-8 minutes on each side or until golden brown and cooked through. Drain on paper towels.

  4. 4

    Assemble Salad

In a large bowl, combine croutons, halved cherry tomatoes, diced cucumber, and thinly sliced red onion. Slice the fried chicken and add on top of the salad.

  5. 5

    Dress and Serve

Drizzle the honey jalapeno dressing over the salad. Toss gently to combine and serve immediately.
