Pasta Preparation

Cook the Penne
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually around 11-12 minutes. Drain and set aside.
Sautéing Mushrooms

Sauté the Mushrooms
In a large skillet, melt 1 tablespoon of sweet butter over medium heat. Add the cremini, shiitake, and oyster mushrooms. Sauté for about 5-7 minutes until they are golden brown and soft.
Adding Aromatics and Stock

Add Aromatics
Add the roasted garlic and fresh sage leaves to the skillet with the mushrooms. Cook for an additional 2 minutes, stirring frequently.

Incorporate Vegetable Stock
Pour in the vegetable stock and bring to a simmer. Allow it to reduce slightly for about 3-5 minutes.

Combine Pasta and Sauce
Add the cooked penne pasta to the skillet, stirring well to combine with the mushroom and stock mixture. Stir in the remaining sweet butter until melted and well incorporated.

Plate the pasta and top with toasted breadcrumbs and grated Parmigiano cheese. Serve immediately.
