Preparation
Cook the Penne Pasta
In a large pot, bring water to a boil. Add a pinch of salt. Once boiling, add the penne pasta and cook according to package instructions (about 10-12 minutes) until al dente. Drain and set aside.
Prepare the Vegetables
While the pasta is cooking, chop the roasted red peppers into bite-sized pieces. Mince the roasted garlic cloves. Rinse the fresh spinach under cold water and let it drain.
Sauce Preparation
Make the Tomato Cream Sauce
In a large skillet, heat the olive oil over medium heat. Add the minced roasted garlic and sauté for 1-2 minutes until fragrant. Stir in the canned diced tomatoes (with juices) and bring to a simmer. Cook for about 5 minutes.
Add Cream and Season
Reduce the heat to low and slowly stir in the heavy cream. Add salt and black pepper, stirring continuously. Let the sauce simmer for an additional 5 minutes until it thickens slightly.
Combine and Serve
Mix Everything Together
Add the cooked penne pasta to the sauce, tossing to coat the pasta evenly. Add the chopped roasted red peppers and fresh spinach, stirring until the spinach wilts (about 2-3 minutes).
Serve
Serve the Penne Capricciose hot, garnished with grated Parmesan cheese on top.
