Method
Frying Calamari
Prepare the Calamari
In a large bowl, combine the flour, cornstarch, salt, black pepper, and garlic powder. Mix well.
Breading Process
Dip the cleaned calamari rings into the flour mixture, then into the beaten eggs, and finally coat them with breadcrumbs. Make sure each ring is well coated.
Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the heat by dropping a small piece of bread into the oil; if it bubbles and browns quickly, it's ready.
Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches. Fry for 2-3 minutes until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels.
Making Marinara Sauce
Add Tomatoes and Seasonings
Pour in the crushed tomatoes and add the dried oregano, salt, and black pepper. Stir to combine.
Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. Add the fresh basil just before serving.
