Prepare the Peppers
Slice the sweet bell pepper and hot chili pepper into thin strips. Set aside.

Make the Dressing
In a small bowl, whisk together the extra virgin olive oil, lemon juice, cumin, paprika, salt, and black pepper. Stir in the chopped Kalamata olives and set aside.

Sear the Ahi Tuna
Heat a non-stick skillet over high heat. Season the ahi tuna steaks with salt and black pepper. Sear the tuna for 1-2 minutes on each side for rare, adjusting the time based on your desired doneness. Remove from heat and let rest for a minute.

Sauté the Peppers
In another pan, add a tablespoon of olive oil and heat over medium heat. Add the sliced sweet and hot peppers, sautéing them until tender, about 5 minutes.
Plating

Assemble the Dish
On a plate, arrange the crispy potato slices, top with sautéed peppers, and place the seared ahi tuna on top. Drizzle the Moroccan olive dressing over the dish, and serve immediately.
