Panna Cotta Base Preparation

Prepare the Gelatin
In a small bowl, sprinkle the gelatin powder over cold water and let it sit for about 5-10 minutes to bloom.

Heat the Cream Mixture
In a saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat until the sugar is dissolved and the mixture is warm but not boiling.

Add Gelatin
Remove the saucepan from heat. Stir in the bloomed gelatin and vanilla extract until completely dissolved.

Chill the Mixture
Pour the mixture into individual serving glasses or ramekins. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.
Berry Sauce Preparation

Prepare the Berries
In a small saucepan, combine the mixed berries, granulated sugar, and lemon juice. Cook over medium heat for about 5-7 minutes, stirring gently until the berries are soft and the sugar is dissolved.

Blend the Sauce
Remove from heat and let the mixture cool slightly. Use an immersion blender or a regular blender to blend the sauce until smooth, then strain through a fine-mesh sieve to remove seeds, if desired.

Chill the Sauce
Refrigerate the berry sauce until ready to serve.
Serving

Serve the Panna Cotta
Once the panna cotta is set, remove from the refrigerator. Top each panna cotta with a generous spoonful of berry sauce before serving.
