Main Ingredients
Method
Preparation
- 1
Prepare the Chicken
Season the chicken breasts with salt and black pepper on both sides. Dredge them in all-purpose flour, shaking off any excess flour.
Cooking
- 2
Sauté the Chicken
In a large skillet, heat olive oil over medium-high heat. Add the floured chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- 3
Make the Sauce
In the same skillet, add the butter. Once melted, add the minced garlic and sauté for about 30 seconds, or until fragrant. Pour in the chicken broth and bring to a simmer, scraping up any brown bits from the bottom of the pan.
- 4
Add Lemon and Capers
Stir in the fresh lemon juice and capers, allowing the sauce to simmer for another 2-3 minutes. Taste and adjust seasoning if necessary.
- 5
Combine Chicken and Sauce
Return the chicken to the skillet, spooning sauce over the chicken. Let it cook for an additional 2 minutes to heat through.
- 6
Garnish and Serve
Sprinkle the chopped parsley over the chicken piccata before serving.
