Prepare Chicken

Season and Bread the Chicken
Pat the chicken breasts dry with paper towels, then season both sides with salt and black pepper. Set up a breading station by placing flour in one shallow dish, beaten eggs in another, and a mixture of bread crumbs and grated Romano cheese in a third.

Coat the Chicken
Dredge each chicken breast in flour, shaking off the excess. Dip into the beaten eggs, then coat with the bread crumb and cheese mixture, pressing gently to adhere.

Cook the Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Transfer to a baking dish.

Add Tomatoes and Seasonings
Pour in the crushed tomatoes and add oregano, basil, salt, and pepper. Stir well and let simmer for about 10 minutes.

Combine Sauce with Chicken
Pour the prepared tomato sauce over the chicken in the baking dish, ensuring each piece is covered.
Prepare Pasta

Cook the Penne
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Assemble and Bake

Add Cheese and Bake
Sprinkle the smoked mozzarella cheese evenly over the chicken and sauce. Place the baking dish in a preheated oven at 375°F (190°C) and bake for 20-25 minutes, until the cheese is melted and bubbly.

Serve the chicken parmesan over the cooked penne pasta, garnished with additional Romano cheese if desired.
