Preheat the oven
Preheat your oven to 400°F (200°C).

Cool and cut
Remove the potatoes from the oven and let them cool for about 10 minutes. Cut each potato in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin.

Add toppings
Sprinkle shredded cheddar cheese into each potato skin. Cook the bacon until crispy, then crumble it and distribute it evenly over the cheese.

Bake again
Place the potato skins back in the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Serving

Garnish and serve
Finely chop the green onions and sprinkle them over the loaded potato skins. Serve hot with a side of sour cream for dipping.
