Preparation of Tresfongo

Prepare the Cassava
Peel the cassava and cut it into chunks. Rinse under cold water.

Cook the Cassava
Place the cassava chunks in a pot of boiling salted water. Cook for about 20-25 minutes or until tender. Drain and let cool slightly.

Mash the Cassava
Once cooled, mash the cassava in a large mixing bowl. Add minced garlic, salt, black pepper, and olive oil. Mix until smooth.

Form the Balls
Using your hands, take a portion of the cassava mixture, flatten it out, and place a small amount of cheese in the center (if using). Shape into a ball, ensuring the cheese is enclosed. Repeat with remaining mixture.

Combine Sauce Ingredients
In a small saucepan, combine tomato sauce, cilantro, lemon juice, salt, and black pepper. Stir well.

Heat the Sauce
Place the saucepan over medium heat and bring the mixture to a simmer. Cook for about 5-10 minutes, stirring occasionally.
Final Assembly

Fry the Tresfongo Balls
In a large skillet, heat oil over medium heat. Fry the cassava balls until golden brown on all sides, about 3-5 minutes per side.

Place the fried tresfongo balls on a serving platter and drizzle the prepared sauce over the top. Serve warm.
