Tostones Preparation

Peeling the Plantains
Using a sharp knife, cut off the ends of the green plantains. Make a lengthwise slit along the skin and gently peel it off. Cut each plantain into 1-inch thick slices.

Frying the Plantains
In a large skillet, heat the vegetable oil over medium-high heat. Once the oil is hot, carefully add the sliced plantains. Fry them for about 3-4 minutes on each side, or until they are golden yellow and slightly soft. Remove from the skillet and drain on paper towels.

Flattening the Plantains
Using the bottom of a flat surface, such as a plate or a frying pan, gently press down on each fried plantain slice to flatten them. They should be about 1/2 inch thick.

Second Frying
Return the flattened plantains to the hot oil and fry them again for an additional 2-3 minutes on each side, until they are crispy and golden brown. Remove from the oil and season with salt to taste.

Making the Garlic Sauce
In a blender or food processor, combine the garlic cloves, mayonnaise, lemon juice, olive oil, and salt. Blend until smooth and creamy. Adjust seasoning if necessary.

Serve the crispy tostones hot with the garlic sauce on the side for dipping.
