Prepare the Shrimp
Place the fresh shrimp in a bowl and cover them with lime juice. Ensure the shrimp are fully submerged. The acid in the lime juice will 'cook' the shrimp.

Cover the bowl with plastic wrap and refrigerate for 30-45 minutes, or until the shrimp turn pink and opaque. Stir occasionally.

Combine Vegetables
In a separate bowl, combine the chopped red onion, diced cucumber, diced tomatoes, chopped jalapeño, and chopped cilantro.

Add Marinade
In a small bowl, whisk together the olive oil, salt, and black pepper. Pour this mixture over the vegetables and mix well.

Combine Shrimp and Vegetables
Once the shrimp are properly marinated, drain them from the lime juice and add them to the vegetable mixture. Toss gently to combine.
