Prepare the seafood
Clean the mussels and clams under cold running water. Remove any beards from the mussels. Peel and devein the shrimp.

Soak the saffron
In a small bowl, soak the saffron threads in a tablespoon of warm water to release their flavor and color.
Cooking

Sauté vegetables
In a large paella pan or wide frying pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

Add garlic and peppers
Stir in the minced garlic and diced red bell pepper. Cook for another 2-3 minutes until the peppers are softened.

Add rice and spices
Add the Bomba rice, smoked paprika, and salt. Stir to coat the rice with the oil and vegetables, cooking for about 2 minutes.

Deglaze with wine
Pour in the white wine, stirring to combine and allowing it to reduce slightly for about 2 minutes.

Add stock and saffron
Pour in the fish stock and the saffron mixture. Bring to a gentle boil, then reduce to a simmer.

Add seafood
Nestle the shrimp, mussels, and clams into the rice. Cover the pan with a lid or aluminum foil and cook for about 15-20 minutes, until the seafood is cooked and the rice is tender.

Add peas
In the last 5 minutes of cooking, sprinkle the green peas over the top, allowing them to steam and warm through.

Rest and serve
Remove the pan from heat and let it rest for about 5 minutes before serving. Enjoy your seafood paella!
