    Prepare the Meat

    Cut the chicken thighs, pork shoulder, and beef shank into large chunks. Season with salt, black pepper, cumin, and oregano.

    Chop the Vegetables

    Peel and chop the yuca, plantains, potatoes, and carrots into large pieces. Cut the corn into halves or thirds.

    Prep Aromatics

    Finely chop the onion and garlic cloves. Set aside.

    Prepare the Broth

    In a large pot, add the meat, water, bay leaves, and chicken bouillon. Bring to a boil.

Cooking

    Simmer the Meat

    Once boiling, reduce the heat to low and let the meat simmer for about 1 hour or until tender.

    Add Vegetables

    After the meat is tender, add the chopped yuca, plantains, potatoes, carrots, and corn. Stir gently.

    Add the chopped onion, garlic, cilantro, and additional salt and black pepper to taste. Let simmer for another 30-40 minutes.
