    Prep the Flank Steak

    Trim any excess fat from the flank steak and cut it into large chunks for easier cooking.

    Chop the Vegetables

    Dice the onion and bell pepper. Mince the garlic cloves.

Cooking the Ropa Vieja

    Sear the Flank Steak

    In a large pot, heat the olive oil over medium-high heat. Add the flank steak chunks and sear them on all sides until browned, about 5-7 minutes. Remove the steak and set aside.

    Sauté the Vegetables

    In the same pot, add the diced onion and bell pepper. Sauté until the onion is translucent, about 5 minutes. Add the minced garlic and sauté for an additional minute.

    Add Tomatoes and Broth

    Stir in the crushed tomatoes and beef broth. Mix well and bring to a simmer.

    Combine and Season

    Return the seared flank steak to the pot. Add cumin, oregano, bay leaves, salt, and black pepper. Stir to combine all ingredients.

    Cook Until Tender

    Cover the pot and reduce the heat to low. Let it simmer for about 2-3 hours, or until the beef is tender and easily shredded.

    Shred the Beef

    Once the beef is cooked, remove it from the pot and shred it using two forks. Return the shredded beef to the pot and stir to combine with the sauce.

    Serve the Ropa Vieja

    Serve the ropa vieja hot, garnished with fresh cilantro and lime wedges if desired. It pairs well with rice or tortillas.
