Main Dish Preparation

    Prepare the Pork Leg

    Clean the pork leg under cold running water. Pat dry with paper towels.

    Marinate the Pork

    In a large bowl, combine the minced garlic, chopped onion, olive oil, salt, black pepper, paprika, and bay leaves. Rub this mixture all over the pork leg and let it marinate for at least 1 hour, preferably overnight in the refrigerator.

    Cook the Pork

    In a large pot, add the marinated pork leg and pour in 4 cups of water. Bring to a boil, then reduce to a simmer. Cover and cook for about 2 hours or until the meat is tender and falls off the bone. Add water as needed to keep the meat submerged.

Rice Preparation

    Cook the Rice

    In a separate pot, rinse the white rice under cold water until the water runs clear. Combine the rinsed rice, 2 cups of water, and 1 tsp of salt in the pot. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes until the rice is tender and the water is absorbed.

    Cook the Beans

    In another pot, combine the black beans, 3 cups of water, minced garlic, chopped small onion, and 1 tsp of salt. Bring to a boil, then reduce to low heat and let simmer for about 1 hour or until the beans are tender. Add more water if necessary.
