Mixing the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Add the butter and mix until the mixture resembles coarse crumbs.

Adding Eggs and Water
Add the egg and cold water to the flour mixture and mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.

Once the mixture has cooled, fold in the shredded cheddar cheese until evenly distributed.
Assembling the Pastelito

Rolling Out the Dough
Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface to about 1/8 inch thick.

Cutting the Dough
Use a round cutter or a glass to cut out circles of dough, about 4-5 inches in diameter.

Place a tablespoon of the filling in the center of each dough circle. Fold the dough over to make a half-moon shape, pressing the edges to seal. Use a fork to crimp the edges for a decorative touch.

In a small bowl, whisk together the egg and water. Brush the egg wash over the top of each pastelito.

Place the pastelitos on a baking sheet lined with parchment paper and bake for 25-30 minutes, until golden brown.
