Prepare the ingredients
Chop the onion, garlic, red bell pepper, and tomato into small pieces. Clean the mussels thoroughly and remove any beards. Cut the calamari into rings.

Soak the saffron
In a small bowl, soak the saffron threads in 2 tablespoons of warm water to release their color and flavor.
Cooking

Sauté the vegetables
In a large paella pan or skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.

Add peppers and tomato
Stir in the chopped red bell pepper and tomato. Cook for another 3-4 minutes until the vegetables are tender.

Add the spices
Add the paprika, salt, and black pepper, and stir well to combine.

Add the rice
Add the Bomba rice to the pan, stirring to coat the rice with the vegetable mixture.

Add liquids
Pour in the fish stock and white wine. Bring to a gentle boil, then reduce the heat to low.

Add saffron
Stir in the soaked saffron along with the soaking water.

Add seafood
Arrange the shrimp, mussels, and calamari on top of the rice. Do not stir after adding the seafood.

Simmer
Cover the pan and let it simmer on low heat for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.

In the last 5 minutes of cooking, sprinkle the frozen peas over the top.
