Method
Preparation
- 1
Prepare the Plantains
Peel the green plantains and cut them into 1-inch thick slices.
- 2
Cook the Bacon
In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and let it drain on paper towels, reserving the bacon fat in the skillet.
- 3
Fry the Plantains
In the same skillet with the reserved bacon fat, add the plantain slices. Fry them until golden brown on all sides, about 5-7 minutes.
- 4
Add Garlic
Add the minced garlic cloves to the skillet during the last 2 minutes of frying the plantains.
- 5
Mash the Mixture
Remove the fried plantains and garlic from the skillet. In a large bowl, mash the plantains and garlic together with a fork or a potato masher.
- 6
Combine with Broth and Bacon
Gradually add the chicken broth to the mashed plantains until the desired consistency is achieved. Stir in the crumbled bacon and season with salt and black pepper.
- 7
Form the Mofongo
Shape the mixture into balls or mound them on a serving plate.
- 8
Garnish and Serve
Garnish with fresh cilantro before serving.
