Preparing the Plantains

    Peeling the Plantains

    Start by cutting off the ends of each green plantain. Carefully make a lengthwise slit in the skin without cutting into the flesh. Remove the skin and cut the plantains into 1-inch thick slices.

    Frying the Plantains

    In a large skillet, heat the vegetable oil over medium heat. Once hot, carefully add the sliced plantains. Fry them until they are golden brown on both sides, about 4-5 minutes per side. Remove the plantains and drain them on paper towels.

Making Mofongo

    Mashing the Plantains

    In a large mortar and pestle (or a mixing bowl if you don't have one), add the fried plantains and garlic cloves. Sprinkle with salt. Mash the mixture until it becomes a smooth paste, incorporating the garlic and salt evenly.

    Incorporating the Cheese

    Once the plantain mixture is well-mashed, fold in the crumbled queso blanco until evenly distributed.

Shaping and Serving

    Shaping the Mofongo

    Wet your hands slightly to prevent sticking, then take a portion of the mofongo mixture and shape it into a ball or mound. Repeat with the remaining mixture.

    Garnishing and Serving

    Place the mofongo balls on a serving plate. Garnish with chopped fresh parsley. Serve warm as a side dish or main dish.
