Preparation of Chicken

Cook the Chicken
In a pot, add the chicken breast and cover it with chicken broth. Bring to a boil, then reduce to a simmer and cook for about 20 minutes or until the chicken is fully cooked. Remove the chicken from the pot and let it cool.

Shred the Chicken
Once the chicken is cool enough to handle, shred it with two forks into bite-sized pieces.

Prepare the Garlic
Mince the garlic cloves and set aside.
Preparation of Plantains

Peel and Cut Plantains
Peel the green plantains and cut them into 1-inch thick slices.

Fry the Plantains
In a large skillet, heat olive oil over medium heat. Fry the plantain slices until they are golden brown on both sides, about 4-5 minutes per side. Remove from oil and drain on paper towels.

Mash the Plantains
In a large bowl, mash the fried plantains while they are still hot. Mix in the minced garlic, salt, and black pepper until well combined.

Add Shredded Chicken
Fold in the shredded chicken and chopped cilantro into the mashed plantains until evenly mixed.

Form Mofongo Balls
Wet your hands and take a portion of the mixture to form into a ball about the size of a fist. Repeat until all the mixture is shaped into balls.
Serving

Plate the Mofongo
Serve the mofongo balls on a plate while warm. Optionally, top with sour cream, sliced avocado, and additional cilantro for added flavor.
