Caramel Preparation

    Prepare the Caramel

    In a medium saucepan, combine 1 cup of granulated sugar and 1 cup of water. Place over medium heat and stir until the sugar has dissolved.

    Cook the Caramel

    Once the sugar has dissolved, stop stirring and allow the mixture to come to a boil. Cook for about 10-15 minutes or until the syrup turns a deep amber color. Remove from heat immediately to prevent burning.

    Coat the Flan Mold

    Quickly pour the hot caramel into a round flan mold or individual ramekins, tilting them to coat the bottom evenly. Set aside to harden.

Custard Preparation

    Prepare the Custard Mixture

    In a large mixing bowl, whisk together 4 large eggs, 1 can (14 oz) of sweetened condensed milk, 1 can (12 oz) of evaporated milk, and 1 tsp of vanilla extract until smooth.

    Combine and Blend

    Ensure that the mixture is well combined and smooth, with no lumps from the eggs. You can also use a blender for a smoother texture.

Baking

    Pour Custard into Mold

    Carefully pour the custard mixture over the hardened caramel in the flan mold or ramekins.

    Prepare for Baking

    Preheat the oven to 350°F (175°C). Place the flan mold in a larger baking dish and fill the outer dish with hot water until it reaches halfway up the sides of the flan mold (this is a water bath).

    Bake the Flan

    Bake in the preheated oven for about 50-60 minutes, or until the custard is set and a knife inserted in the center comes out clean.

    Cool and Refrigerate

    Remove the flan from the oven and let it cool in the water bath for about 10 minutes. Then, remove from the water bath and refrigerate for at least 4 hours or overnight.

Serving

    Unmold the Flan

    To serve, run a knife around the edges of the flan to loosen it. Place a plate over the mold and invert it to release the flan onto the plate, allowing the caramel to drizzle over it.
