Costilla (Ribs)

Method

Preparation of Ribs

    Preheat your oven to 150°C (300°F).

    In a large bowl, mix together the garlic powder, onion powder, paprika, salt, and black pepper.

    Rub the spice mixture all over the pork ribs, ensuring they are evenly coated.

    Drizzle olive oil over the ribs and rub it in for added flavor.

    Place the ribs on a baking tray lined with foil and cover with another piece of foil.

    Bake the ribs in the preheated oven for 2 hours.

    After 2 hours, remove the foil and brush the BBQ sauce generously over the ribs.

    Increase the oven temperature to 200°C (400°F) and bake for an additional 30 minutes, allowing the sauce to caramelize.

Cooking the Rice

    In a medium saucepan, combine the long grain rice, water, and salt.

    Bring to a boil over medium-high heat.

    Once boiling, reduce the heat to low, cover, and let simmer for about 18-20 minutes or until the rice is tender and the water is absorbed.

    Remove from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.

Cooking the Beans

    In a small saucepan, heat olive oil over medium heat.

    Add minced garlic and sauté until fragrant, about 1 minute.

    Add the canned black beans (drained and rinsed) into the saucepan.
