Method

Main Dish

  1. 1

    Prepare the Pork Chops

Season the pork chops with salt, black pepper, and cumin on both sides. Let them sit for about 15 minutes to absorb the flavors.

  2. 2

    Sear the Pork Chops

In a large skillet, heat the olive oil over medium-high heat. Add the seasoned pork chops and sear them for about 4-5 minutes on each side until they are browned. Remove from the skillet and set aside.

  3. 3

    Sauté Vegetables

In the same skillet, add minced garlic, chopped onion, and diced bell pepper. Sauté until the onions are translucent and the peppers are tender, about 3-4 minutes.

  4. 4

    Simmer the Pork Chops

Return the seared pork chops to the skillet. Add tomato sauce, chicken broth, bay leaves, and oregano. Bring to a simmer, cover, and cook for 30-35 minutes until the pork is tender.

Rice

  1. 5

    Cook the Rice

In a pot, combine the long-grain rice, water, and salt. Bring to a boil over high heat, then reduce heat to low and cover. Simmer for 18-20 minutes until the rice is cooked and water is absorbed. Fluff with a fork before serving.

Beans

  1. 6

    Prepare the Beans

In a saucepan, add the canned black beans (drained and rinsed), finely chopped onion, minced garlic, cumin, salt, and black pepper. Heat over medium heat until warmed through, about 5-7 minutes.
