Chicken Preparation

1. Prepare the Chicken

Pat the chicken breasts dry with paper towels. Rub the olive oil, salt, and black pepper evenly over the chicken.

2. Grill the Chicken

Preheat the grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Teriyaki Sauce Preparation

3. Make the Teriyaki Sauce

In a small saucepan, combine the soy sauce, honey, mirin, sesame oil, minced garlic, and minced ginger. Bring to a simmer over medium heat, stirring occasionally. Reduce the heat and let it simmer for about 5-10 minutes until slightly thickened.

4. Glaze the Chicken

Once the chicken is grilled, brush the teriyaki sauce over the chicken on both sides and grill for an additional 2 minutes.

Rice Preparation

5. Cook the Rice

In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of rice, reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the water has been absorbed.

Vegetable Preparation

In a large skillet, heat a small amount of olive oil over medium heat. Add broccoli, carrots, and bell pepper. Sauté for about 5-7 minutes until the vegetables are tender-crisp.

7. Assemble the Dish

Serve the grilled chicken on a plate with a generous drizzle of teriyaki sauce. Add a side of rice and sautéed vegetables to complete the meal.
