Preparing the Carne Frita

    Marinate the Beef

    In a large bowl, combine minced garlic, lime juice, salt, and black pepper. Mix well. Add the beef and ensure it is well coated with the marinade. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

    Cook the Beef

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the marinated beef. Cook for about 5-7 minutes on each side, or until the beef is browned and cooked to your desired doneness. Remove from skillet and let it rest for a few minutes.

    Slice the Beef

    After resting, slice the beef against the grain into thin strips. Set aside.

Preparing the Tostones

    Prepare the Plantains

    Peel the green plantains and cut them into 1-inch thick slices.

    First Frying

    In a large frying pan, heat the vegetable oil over medium heat. Once hot, add the plantain slices and fry for about 3-4 minutes on each side until they are lightly golden. Remove from the oil and drain on paper towels.

    Smash the Plantains

    Using the bottom of a heavy glass or a tostonera, gently smash each fried plantain slice to flatten it.

    Second Frying

    Return the smashed plantains to the hot oil and fry again for 2-3 minutes on each side until crispy and golden brown. Remove from the oil, sprinkle with salt, and drain on paper towels.

Serving

    Plate the Dish

    On a serving platter, arrange the sliced carne frita alongside the crispy tostones. Serve with lime wedges for an added burst of flavor.
