Prepare Plantains

    Peel and Cut Plantains

    Peel the green plantains and cut them into 1-inch thick slices.

    Boil Plantains

    In a large pot, bring salted water to a boil. Add the sliced plantains and boil for about 20 minutes until they are tender.

    Mash Plantains

    Drain the plantains and let them cool slightly. In a large bowl, mash the plantains until smooth and season with salt.

Prepare Shrimp Filling

    Sauté Aromatics

    In a large skillet, heat olive oil over medium heat. Add minced garlic, diced onion, and diced bell pepper. Sauté until the vegetables are soft, about 5 minutes.

    Cook Shrimp

    Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes. Stir in cilantro, lime juice, salt, and black pepper. Remove from heat and set aside.

Prepare Caramel Sauce

    Make Caramel

    In a saucepan over medium heat, combine sugar and stir until it begins to melt and turns golden brown. Remove from heat and carefully stir in butter and heavy cream until smooth.

Assemble Caramofongo

    Form Plantain Balls

    Take a portion of the mashed plantains and flatten it in your palm. Place a spoonful of shrimp filling in the center and mold the plantains around it to form a ball. Repeat with remaining ingredients.

    Fry Plantain Balls

    In a large pot, heat vegetable oil to 350°F (175°C). Fry the plantain balls in batches until golden brown, about 4-5 minutes. Drain on paper towels.

    Serve

    Drizzle the caramel sauce over the fried plantain balls and serve warm.
